our sidra natural is a blend of six different heirloom apple varieties that are blended to create a cider that is extra dry with vibrant acidity and distinctive character.

Did you know that “Sidra natural” is a traditional cider that dates back over 2,000 years in the costa verde region of northern spain?
To make this cider true to the tradition, all six apple varieties are hand harvested and pressed directly into large temperature controlled chestnut barrels. The cider then undergoes a 2-month cold fermentation using only the wild yeast on the apples and those native to the cider-house. after fermentation, this cider is aged on it’s lees for a minimum of 6 months before canning. this extended aging allows the carbonation to partially dissipate, giving the cider more of a still white wine characteristic, while also adding body, structure and fully integrating the flavors and aromas. This process is what gives our sidra natural the distinctive character that it is known for.

Tasting notes
The cider pours a rich golden-straw color due to aging in barrel. Out of the glass erupts aromas of fresh cut green apple, kaffir lime, citrus blossom and wet grass. The flavor profile matches the aromas with the likes of sour green apple, citrus zest, crunchy apple core and nutty finish of brazil nut and chestnut.
