      <image:title>History - costa verde - a natural paradise</image:title>
      <image:caption>Cider has a rich history in the Costa Verde region of northern Spain, being the second oldest region in the world for cider production. They have been producing ciders for more than 2,000 years, since the First Century B.C.E., when the Romans brought apples to the area.  The Romans planted apples for cider in regions that were not conducive to growing wine grapes.  What makes this region so special for cider production?  The extremely wet and cold weather helps to extend the growing season of the apples while keeping the sugars low and acid high. Typical ciders produced in this region are not sweet.  They are known for having sharp, crisp acidity and lower alcohol which allows the essence of these heritage apple varieties to show though. The Costa Verde region’s ciders are also unique because they produce what is called Sidra Natural — meaning they are fermented using the natural yeast found in the fruit and never add sugar.  By contrast, most domestic ciders begin with apple concentrate, purchased juice or dessert/culinary apples, and sometimes sugar and artificial flavors are also added. Importantly, all of our ciders are comprised of heirloom cider apple varieties.  They are fresh pressed in old traditional wooden basket presses and then slow fermented for around three months in Chestnut Barrels.  They are then aged for a minimum of three months on their lees in the same Chestnut barrels before going into can or bottle.  We strive for our ciders to be the perfect balance of new-world innovation and old-world tradition.</image:caption>

      <image:title>Cider Making - Harvest</image:title>
      <image:caption>All of our apples are hand harvested from small family farms. Many of them have been growing apples for multiple generations. We only use heirloom cider specific apple varieties for each of our ciders.</image:caption>

      <image:title>Cider Making - Aging</image:title>
      <image:caption>After fermentation, our ciders are then aged for 6-8 months in the same chestnut barrels they were fermented in. They are aged on their lees (spent yeast and apple solids), just like white wines, which gives the ciders body, creaminess, structure and a nutty finish. We taste each barrel every week and will only bottle/can when they are ready.</image:caption>

      <image:title>Cider Making - Fermentation</image:title>
      <image:caption>All of our ciders are wild fermented in temperature controlled chestnut barrels using wild yeast from the apples and native yeast present in the Cider House. The ciders undergo a long cold fermentation, which helps to preserve aromas and the freshness on the palate. Fermentation typically takes between 45 - 60 days to complete.</image:caption>

      <image:title>Cider Making - Washing</image:title>
      <image:caption>After harvest our apples get washed thoroughly on the outside to remove any dirt and debris. This helps to ensure we get clean juice without any contamination.</image:caption>

      <image:title>Cider Making - Grinding Pomace</image:title>
      <image:caption>Once we have clean apples, we must grind them to make what is called pomace. This is ground up apples that are allowed to slightly oxidize so we can press the juice out of it. Afterward, the pomace is composted and then incorporated back into the soil in the orchards.</image:caption>

      <image:title>Cider Making - Pressing</image:title>
      <image:caption>Pressing separates the juice from the pulp by squeezing the pomace. We use traditional wooden basket presses for our cider, which allows for a gentle and slow pressing. The fresh juice is captured in sanitized bins and then pumped into Chestnut barrels.</image:caption>

      <image:title>Our Ciders - Sidra Natural - To make this cider true to the tradition, all six apple varieties are hand harvested and pressed directly into large temperature controlled chestnut barrels. The cider then undergoes a 2-month cold fermentation using only the wild yeast on the apples and those native to the cider-house. after fermentation, this cider is aged on it’s lees for a minimum of 6 months before canning. this extended aging allows the carbonation to partially dissipate, giving the cider more of a still white wine characteristic, while also adding body, structure and fully integrating the flavors and aromas. This process is what gives our sidra natural the distinctive character that it is known for.</image:title>

      <image:title>Our Ciders - Sidra Moderna - The vision of this cider was to create an “american” style cider but only using heirloom cider apple varieties, not the culinary varieties mainly used in the US. in order to achieve the flavor and fruitiness we wanted, we had to sample many apple varieties to find the perfect flavors. after tasting 10+ different options, we found that Ernestina and verdialona were perfect for our vision… sweet, slightly bitter and full of ripe fruit notes. both varieties are typically used for blending with other apples to add ripe fruit flavors. this sidra moderna is their big debut in a lead role and we couldn’t be more pleased with the richness and depth of this dynamic duo.</image:title>
